Make-Ahead Thanksgiving Dressing Base

A simple buttery celery and onion mixture that adds rich homemade flavor to Thanksgiving dressing or stuffing. Perfect for preparing ahead and freezing.

Ingredients
  

  • 2 cups chopped yellow onion
  • 2 cups chopped celery
  • ½ cup butter
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp poultry seasoning
  • Fresh thyme or sage optional

Equipment

  • Large skillet
  • Cutting board
  • knife
  • measuring cups
  • Measuring spoons
  • Wooden spoon
  • Freezer bags or containers

Method
 

  1. Melt butter in a large skillet over medium heat.
  2. Add chopped celery and onion.
  3. Stir until coated with butter.
  4. Cook for 10–12 minutes until soft and fragrant.
  5. Add salt, pepper, seasoning, and herbs.
  6. Cook another minute.
  7. Cool completely.
  8. Store in freezer bags or containers.
  9. Freeze until ready to use.
  10. Thaw and mix into dressing before baking.

Notes

Great for holiday preparation.
Freeze up to 3 months.
Do not overbrown vegetables.
Add garlic or mushrooms for extra flavor.
