- Melt butter in a large skillet over medium heat.
- Add chopped celery and onion.
- Stir until coated with butter.
- Cook for 10–12 minutes until soft and fragrant.
- Add salt, pepper, seasoning, and herbs.
- Cook another minute.
- Cool completely.
- Store in freezer bags or containers.
- Freeze until ready to use.
- Thaw and mix into dressing before baking.

Freeze up to 3 months.
Do not overbrown vegetables.
Add garlic or mushrooms for extra flavor.
