Marinated Cucumbers, Onions, and Tomatoes

A crisp, tangy summer salad that gets better as it chills.

Ingredients
  

  • 2 cucumbers sliced
  • 1 pint cherry tomatoes halved
  • 1 red onion sliced
  • 1 bell pepper sliced (optional)
  • ½ cup vinegar
  • ¼ cup water
  • 2 tbsp sugar
  • 1 tsp salt
  • ½ tsp pepper
  • 1 tsp dill
  • 1 tbsp olive oil optional

Equipment

  • Large bowl or mason jar
  • whisk
  • Measuring cups and spoons
  • Knife and cutting board

Method
 

  1. Combine veggies in bowl.
  2. Whisk dressing ingredients. Pour over veggies.
  3. Toss, chill at least 1 hour. Stir occasionally. Serve drained or with brine.

Notes

Add fresh herbs for extra flavor.
Pairs well with grilled meats or sandwiches.
