Method
- Preheat oven to 350°F (180°C). Grease and flour your cake pan.
- In a large bowl, whisk eggs, sugar, coconut milk, and butter.
- In another bowl, mix flour and baking powder.
- Add dry to wet ingredients and stir just until combined.
- Pour into prepared pan and bake for 30–35 minutes.
- While hot, sprinkle shredded coconut on top.
- Cool in pan 10–15 minutes, then transfer to rack. Serve warm or cooled.
