A smooth, pipeable buttercream that dries firm for stacking but stays tender when bitten — perfect for decorated cookies.

Ingredients
  

  • 1 cup unsalted butter softened
  • 3 –4 cups powdered sugar sifted
  • ¼ cup light corn syrup or glucose
  • 1 –2 Tbsp milk or cream
  • 1 tsp vanilla extract
  • Pinch of salt

Equipment

  • Stand or hand mixer
  • Paddle attachment
  • spatula
  • Sifter
  • Piping bags

Method
 

  1. Beat butter until light and fluffy.
  2. Gradually add powdered sugar on low speed.
  3. Add corn syrup, vanilla, and salt.
  4. Beat on medium-high until smooth and fluffy.
  5. Adjust consistency with milk or cream.
  6. Color, pipe, and decorate cookies.
  7. Let dry 24 hours before stacking.

Notes

Use gel food coloring only
Dries firm but not hard
Rewhip if stored or chilled
Ideal for detailed cookie work
