Method
- Line a baking sheet with parchment or wax paper.
- In a saucepan over medium heat, melt the butter. Add brown sugar, condensed milk, salt, and cinnamon. Stir constantly.
- Bring mixture to a rolling boil and boil for 1 minute.
- Remove from heat. Stir in coconut, pecans, and vanilla until fully combined.
- Drop spoonfuls of the mixture onto the prepared baking sheet.
- Let cookies cool at room temp for 30–60 minutes or refrigerate to speed up.
- Enjoy and store in an airtight container at room temperature.
