Ingredients
  

  • - 1 ½ cups shredded coconut
  • - 1 cup chopped pecans
  • - ½ cup unsalted butter
  • - 1 cup packed brown sugar
  • - ½ cup sweetened condensed milk
  • - 1 teaspoon vanilla extract
  • - ¼ teaspoon salt
  • - ½ teaspoon ground cinnamon optional

Equipment

  • Large saucepan
  • Wooden spoon or silicone spatula
  • Measuring cups and spoons
  • Baking sheet
  • Parchment paper or wax paper
  • Cookie scoop or spoon

Method
 

  1. Line a baking sheet with parchment or wax paper.
  2. In a saucepan over medium heat, melt the butter. Add brown sugar, condensed milk, salt, and cinnamon. Stir constantly.
  3. Bring mixture to a rolling boil and boil for 1 minute.
  4. Remove from heat. Stir in coconut, pecans, and vanilla until fully combined.
  5. Drop spoonfuls of the mixture onto the prepared baking sheet.
  6. Let cookies cool at room temp for 30–60 minutes or refrigerate to speed up.
  7. Enjoy and store in an airtight container at room temperature.

- Add a sprinkle of sea salt or drizzle of melted chocolate for extra flair.
