No-Bake Cottage Cheese Energy Log (Dessert in a Bottle)

A no-bake, high-protein, no-refined-sugar snack log made from blended cottage cheese, dried fruit, nuts, and collagen-boosting gelatin. Naturally gluten-free, meal-prep friendly, and perfect for post-workout snacks, lunchboxes, or dessert. Served chilled and sliced.

Ingredients
  

  • 2 cups 16 oz cottage cheese (2% or 4%)
  • ½ cup sour cream or Greek yogurt
  • 3 –4 tbsp honey or sugar-free syrup / monk fruit for no-added-sugar
  • 2 tbsp unflavored gelatin powder
  • ¼ cup cold water to bloom the gelatin
  • 1 tsp vanilla extract
  • Pinch of salt
  • 1 cup chopped mixed dried fruit dates, apricots, cranberries, plums
  • ¾ cup chopped mixed nuts walnuts, peanuts, pistachios
  • 1 –2 tbsp chia seeds optional

Method
 

  1. Sprinkle the gelatin over the cold water and let it sit 5–10 minutes to bloom.
  2. Gently melt the bloomed gelatin until fully liquid; do not boil.
  3. In a blender, combine the cottage cheese, sour cream or yogurt, honey (or sweetener), vanilla, and salt. Blend until completely smooth.
  4. With the blender running, slowly stream in the melted gelatin until evenly dispersed.
  5. Pour the base into a bowl and fold in the chopped dried fruit, nuts, and chia seeds (if using).
  6. Pour into a plastic-wrap-lined bottle mold (neck cut off) or lined small loaf pan.
  7. Chill at least 4–6 hours, ideally overnight, until firm and springy.
  8. Release, peel away the wrap, and slice into ¾-inch rounds with a clean knife.
  9. Serve chilled, or let slices rest 5 minutes at room temperature.
