Sprinkle the gelatin over the cold water and let it sit 5–10 minutes to bloom.
Gently melt the bloomed gelatin until fully liquid; do not boil.
In a blender, combine the cottage cheese, sour cream or yogurt, honey (or sweetener), vanilla, and salt. Blend until completely smooth.
With the blender running, slowly stream in the melted gelatin until evenly dispersed.
Pour the base into a bowl and fold in the chopped dried fruit, nuts, and chia seeds (if using).
Pour into a plastic-wrap-lined bottle mold (neck cut off) or lined small loaf pan.
Chill at least 4–6 hours, ideally overnight, until firm and springy.
Release, peel away the wrap, and slice into ¾-inch rounds with a clean knife.
Serve chilled, or let slices rest 5 minutes at room temperature.
