Ingredients
  

  • For the Crust
  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter melted
  • For the Filling
  • 2 packages 8 oz each, cream cheese, softened
  • 1 can 5 oz, evaporated milk
  • 3/4 cup frozen lemonade concentrate thawed
  • 1 box 3.4 oz, instant lemon pudding mix
  • For Topping
  • Whipped cream
  • Fresh lemon slices optional

Method
 

  1. Mix graham cracker crumbs, sugar, and melted butter in a bowl until the mixture resembles wet sand.
  2. Press the mixture firmly into the bottom and up the sides of a 9-inch pie pan.
  3. Refrigerate the crust while making the filling.
  4. Beat softened cream cheese until smooth and fluffy.
  5. Add evaporated milk, thawed lemonade concentrate, and instant lemon pudding mix.
  6. Beat until silky and completely combined.
  7. Pour the filling into the chilled crust and smooth the top with a spatula.
  8. Cover and refrigerate for at least 4 hours, or until firm and set.
  9. Before serving, top with whipped cream and fresh lemon slices if desired.
  10. Slice cold and serve.

Notes

Use softened block cream cheese for the smoothest filling.
Make sure the pudding mix is instant.
Chill overnight for the cleanest slices.
Store covered in the refrigerator for up to 4 days.
