A fun and easy no-bake chocolate oat treat with coconut and optional chocolate chips.

Ingredients
  

  • 1 cup unsalted butter
  • 1 cup granulated sugar
  • 1/2 cup milk
  • 1/2 cup unsweetened cocoa powder
  • 1 teaspoon vanilla extract
  • 3 cups quick-cooking oats
  • 1 cup shredded coconut
  • 1/2 cup mini chocolate chips optional

Equipment

  • Medium saucepan
  • Wooden spoon or spatula
  • Measuring cups and spoons
  • Parchment or wax paper
  • Baking sheet
  • Cookie scoop or small spoon

Method
 

  1. Combine butter, sugar, milk, and cocoa in saucepan. Bring to boil, stir constantly.
  2. Boil for 1 minute. Remove from heat.
  3. Stir in vanilla, oats, coconut, and chocolate chips.
  4. Cool slightly, then shape into 1-inch balls.
  5. Place on lined baking sheet. Chill 30 minutes.
  6. Store in fridge in airtight container.

Notes

– Add chopped nuts or swap coconut for crushed cereal for variations.
– Great make-ahead snack that keeps well in the fridge.
