Ingredients
  

  • For the filling:
  • cups creamy peanut butter
  • ½ cup unsalted butter softened
  • 1 teaspoon vanilla extract
  • 3 cups powdered sugar
  • Pinch of salt
  • For the coating:
  • 2 cups semi-sweet or milk chocolate chips
  • 2 tablespoons coconut oil

Method
 

  1. Beat peanut butter and softened butter until smooth. Mix in vanilla and salt.
  2. Gradually add powdered sugar until a thick, rollable dough forms.
  3. Roll into 1-inch balls and place on a parchment-lined sheet. Chill 20–30 minutes.
  4. Melt chocolate chips and coconut oil in 30-second microwave bursts, stirring until smooth.
  5. Dip chilled balls in chocolate, let excess drip off, and return to the sheet.
  6. Chill 15–20 minutes until the chocolate is fully set. Store in an airtight container in the refrigerator.

Notes

Use standard creamy peanut butter for best texture. Coconut oil makes the chocolate glossy and easy to dip. Keep refrigerated. Highly addictive—consider hiding a few.
