Ingredients
  

  • Crust:
  • 2 cups graham cracker crumbs
  • ½ cup melted butter
  • Filling:
  • 16 oz cream cheese softened
  • 1 cup powdered sugar
  • 1 cup whipped topping such as Cool Whip
  • Topping:
  • 1 cup crushed pineapple well drained

Method
 

  1. Mix graham cracker crumbs and melted butter. Press firmly into the bottom of a 9x13-inch pan. Chill while making the filling.
  2. Beat softened cream cheese until smooth. Add powdered sugar and beat until light and silky.
  3. Gently fold in the whipped topping until airy and combined.
  4. Spread the filling evenly over the chilled crust.
  5. Spoon the well-drained crushed pineapple over the top and spread gently into an even layer.
  6. Cover and refrigerate at least 4 hours or overnight.
  7. Slice into squares and serve cold.

Notes

Soften cream cheese fully for a lump-free filling. Drain the pineapple very well to avoid a watery top. Press the crust firmly. Chill fully for clean slices. Even better the next day. Store covered in the refrigerator. Optional garnishes: toasted coconut, cherries, or mint. Excellent make-ahead dessert.
