- Mix graham cracker crumbs and melted butter. Press firmly into the bottom of a 9x13-inch pan. Chill while making the filling.
- Beat softened cream cheese until smooth. Add powdered sugar and beat until light and silky.
- Gently fold in the whipped topping until airy and combined.
- Spread the filling evenly over the chilled crust.
- Spoon the well-drained crushed pineapple over the top and spread gently into an even layer.
- Cover and refrigerate at least 4 hours or overnight.
- Slice into squares and serve cold.
Notes
Soften cream cheese fully for a lump-free filling. Drain the pineapple very well to avoid a watery top. Press the crust firmly. Chill fully for clean slices. Even better the next day. Store covered in the refrigerator. Optional garnishes: toasted coconut, cherries, or mint. Excellent make-ahead dessert.
