  • 2 cups graham cracker crumbs
  • ½ cup unsalted butter melted
  • For the Filling
  • 8 oz cream cheese softened
  • 1 cup powdered sugar
  • 20 oz crushed pineapple thoroughly drained
  • 2 cups whipped topping divided
  • For Garnish
  • Extra graham cracker crumbs
  • Pineapple tidbits optional

Method
 

  1. Combine graham cracker crumbs and melted butter until evenly moistened.
  2. Press mixture firmly into the bottom of a baking dish.
  3. Refrigerate crust while preparing filling.
  4. Beat cream cheese and powdered sugar until smooth and fluffy.
  5. Fold in drained pineapple.
  6. Fold in 1 cup whipped topping until fully combined.
  7. Spread filling evenly over chilled crust.
  8. Top with remaining whipped topping.
  9. Sprinkle with graham cracker crumbs and garnish as desired.
  10. Refrigerate for at least 4 hours or overnight.
  11. Slice and serve chilled.
