No-Bake Scotcheroo Truffles

Scotcheroo Truffles – No-Bake Peanut Butter & Chocolate Bliss!

Ingredients
  

  • 1 cup creamy peanut butter
  • 1 cup powdered sugar
  • 2 tbsp unsalted butter softened
  • cups Rice Krispies cereal
  • 1 cup semisweet chocolate chips
  • 1 cup butterscotch chips
  • ¼ cup extra chips for optional drizzle

  • Microwave bowl
  • Baking tray
  • Parchment paper

Method
 

  1. In a large bowl, stir together peanut butter, powdered sugar, and softened butter until smooth.
  2. Gently fold in Rice Krispies cereal until fully coated.
  3. Roll mixture into bite-sized balls and place on parchment-lined tray. Refrigerate 20 minutes.
  4. Meanwhile, melt chocolate and butterscotch chips together in microwave-safe bowl in 30-second intervals, stirring between.
  5. Dip each truffle into the melted mixture and return to tray.
  6. Melt remaining chips and drizzle over truffles for decoration.
  7. Chill another 15 minutes until set. Store refrigerated in airtight container.

Notes

Use a cookie scoop to portion evenly and keep hands clean.
Add sea salt sprinkle on top before chilling for a sweet-salty twist.
Want a deeper flavor? Swap semisweet chips for dark chocolate chips.
Want even more crunch? Add crushed pretzels or chopped roasted peanuts!
