- In a large bowl, stir together peanut butter, powdered sugar, and softened butter until smooth.
- Gently fold in Rice Krispies cereal until fully coated.
- Roll mixture into bite-sized balls and place on parchment-lined tray. Refrigerate 20 minutes.
- Meanwhile, melt chocolate and butterscotch chips together in microwave-safe bowl in 30-second intervals, stirring between.
- Dip each truffle into the melted mixture and return to tray.
- Melt remaining chips and drizzle over truffles for decoration.
- Chill another 15 minutes until set. Store refrigerated in airtight container.
Notes
Use a cookie scoop to portion evenly and keep hands clean.
Add sea salt sprinkle on top before chilling for a sweet-salty twist.
