Method
- Slice the strawberries and set aside.
- Whip the heavy cream with sugar and vanilla until soft to medium peaks form.
- Line the bottom of an 8×8-inch pan with whole graham crackers.
- Spread a layer of whipped cream over the crackers, then top with sliced strawberries.
- Repeat the layers two more times, ending with a final layer of strawberries on top.
- Cover and refrigerate at least 3 hours or overnight until the crackers have softened.
- Slice and serve cold.
Notes
Overnight chilling produces the best texture. Adjust sugar to taste depending on the sweetness of the berries. Keep the cake refrigerated until serving. Best within 24–36 hours as the crackers continue to soften.
