Oatmeal and Zucchini Appetizer

Golden, crispy, and full of wholesome flavor — this easy oat and zucchini recipe is a crowd-pleaser that’s light, nutritious, and absolutely addictive.

Ingredients
  

  • 1 cup rolled oats
  • 2 medium zucchinis grated
  • ½ cup grated Parmesan cheese
  • 2 eggs beaten
  • 2 cloves garlic minced
  • ¼ cup parsley chopped
  • 1 tsp dried oregano
  • Salt & pepper to taste
  • Olive oil for cooking
  • Optional Sauce:
  • ½ cup Greek yogurt
  • 1 tsp lemon juice
  • Chopped herbs

Equipment

  • Box grater or food processor
  • mixing bowl
  • Skillet or non-stick pan
  • spatula
  • Kitchen towel or cheesecloth

Method
 

  1. Grate zucchini and squeeze out moisture.
  2. Mix all ingredients in a bowl until combined.
  3. Form into 1–2 inch patties and flatten slightly.
  4. Heat olive oil in a skillet and cook patties 3–4 mins per side until golden.
  5. Mix yogurt, lemon, and herbs for a dipping sauce.
  6. Serve warm and enjoy!

Notes

Serve with lemon wedges or a drizzle of olive oil for a Mediterranean twist.
