Ingredients
  

  • ½ cup butter softened
  • 1 cup granulated sugar
  • 2 eggs beaten
  • 4 very ripe bananas mashed
  • cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • ½ teaspoon vanilla extract
  • ½ cup chopped walnuts or pecans

  • 9×5-inch loaf pan (or mini loaf pans)

Method
 

  1. Preheat oven to 350°F. Grease and flour a loaf pan.
  2. Cream butter and sugar until light and fluffy. Add beaten eggs and mashed bananas; mix until combined.
  3. Whisk together flour, baking soda, and salt. Gradually add to the banana mixture, mixing just until incorporated.
  4. Stir in vanilla and chopped nuts.
  5. Pour into the prepared pan and spread evenly.
  6. Bake about 1 hour, or until a toothpick inserted in the center comes out clean. Cool in pan 10–15 minutes, then turn out onto a rack.
  7. For mini loaves: Divide among 4 greased mini pans and bake 35–45 minutes.

Notes

Use very ripe, speckled bananas for best flavor. Do not overmix. Excellent warm with butter. Freezes well. Classic everyday comfort.
