- Brown the ground beef in a large pot over medium heat. Drain excess grease.
- Add onion and garlic; cook until softened.
- Sprinkle flour over the mixture and cook 1 minute, stirring.
- Gradually pour in broth while stirring. Add diced potatoes.
- Simmer until potatoes are fork-tender, about 12–15 minutes.
- Stir in butter, heavy cream, mustard, and cheddar until melted and smooth.
- Season with salt and pepper.
- Ladle into bowls and add desired toppings.
Notes
Use low heat when adding the cheese and cream for the smoothest texture.
