- Heat a large Dutch oven over medium-high heat.
- Add the ground beef, Italian sausage, and chopped onion. Cook until browned and the onion is softened. Drain excess grease.
- Stir in the minced garlic and cook for 30 seconds until fragrant.
- Add the pasta sauce, chicken broth, tomato paste, diced tomatoes, sugar, balsamic vinegar, basil, oregano, bay leaf, salt, and pepper. Stir well.
- Bring the soup to a gentle boil.
- Break the lasagna noodles into bite-sized pieces and stir them into the soup.
- Reduce the heat to medium-low and simmer for 12–15 minutes, stirring occasionally, until the noodles are tender.
- Remove the bay leaf and adjust seasoning to taste.
- Ladle into bowls and top with ricotta, mozzarella, Parmesan cheese, and fresh basil.
