One Pot Lasagna Soup

Ingredients
  

  • 1 lb ground beef
  • 1 lb ground Italian sausage
  • 10 lasagna noodles broken into bite-sized pieces
  • 1 medium onion chopped
  • 4 teaspoons minced garlic
  • 24 oz pasta sauce
  • 8 cups chicken broth
  • 2 tablespoons tomato paste
  • 14 oz diced tomatoes
  • 1 teaspoon sugar
  • 2 teaspoons balsamic vinegar
  • 2 teaspoons dried basil
  • 1 teaspoon dried oregano
  • 1 bay leaf
  • Salt and black pepper to taste

  • Ricotta cheese
  • Mozzarella cheese
  • Freshly grated Parmesan cheese
  • Fresh basil

Method
 

  1. Heat a large Dutch oven over medium-high heat.
  2. Add the ground beef, Italian sausage, and chopped onion. Cook until browned and the onion is softened. Drain excess grease.
  3. Stir in the minced garlic and cook for 30 seconds until fragrant.
  4. Add the pasta sauce, chicken broth, tomato paste, diced tomatoes, sugar, balsamic vinegar, basil, oregano, bay leaf, salt, and pepper. Stir well.
  5. Bring the soup to a gentle boil.
  6. Break the lasagna noodles into bite-sized pieces and stir them into the soup.
  7. Reduce the heat to medium-low and simmer for 12–15 minutes, stirring occasionally, until the noodles are tender.
  8. Remove the bay leaf and adjust seasoning to taste.
  9. Ladle into bowls and top with ricotta, mozzarella, Parmesan cheese, and fresh basil.

Notes

• Brown the meat well for maximum flavor.
• Stir occasionally after adding the noodles to prevent sticking.
• Add extra broth when reheating leftovers.
• Freeze without the noodles for the best texture.
