One-Skillet Rotel Beef & Rice

Easy one-skillet Rotel beef and rice with seasoned ground beef, zesty tomatoes and green chilies, tender rice, and melted cheddar. A complete, comforting weeknight dinner ready in about 30 minutes.

Ingredients
  

  • 1 lb ground beef
  • 1 can 10 oz Rotel tomatoes with green chilies, undrained
  • 1 cup long-grain white rice
  • 2 cups beef broth
  • cups shredded cheddar cheese
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • Salt and pepper to taste
  • Optional: sour cream green onions, tortilla chips

  • Large deep skillet with lid

Method
 

  1. Brown ground beef in a large skillet; drain excess grease.
  2. Stir in garlic powder, onion powder, salt, and pepper.
  3. Add rice and stir to coat.
  4. Pour in undrained Rotel and beef broth; stir.
  5. Bring to a boil, reduce heat to low, cover, and simmer 18–20 minutes until rice is tender.
  6. Remove from heat, top with cheddar, cover, and let sit 2–3 minutes until melted.
  7. Serve with optional toppings.

Notes

Use long-grain white rice for best texture. Keep the lid on while simmering. Residual heat melts the cheese perfectly. Excellent leftovers and meal prep. Adjust heat level with mild or hot Rotel. Add extra cheese if desired.
