Ingredients

  • 2 pounds russet potatoes thinly sliced
  • 8 ounces sharp cheddar cheese shredded
  • 6 slices thick-cut bacon cooked and crumbled
  • 3 green onions thinly sliced

Equipment

  • Large rimmed baking sheet, foil

Method

  1. Preheat oven to 425°F. Line a large baking sheet with foil.
  2. Slice potatoes into ⅛–¼-inch rounds and arrange in a single, slightly overlapping layer.
  3. Bake 20–25 minutes, flipping once, until edges are golden and centers are tender.
  4. Sprinkle with shredded cheddar and crumbled bacon.
  5. Bake 5–8 minutes more until cheese is melted and bubbling.
  6. Top with sliced green onions. Cool a few minutes, then serve from the pan.

Notes

Slice potatoes evenly for uniform cooking. Avoid stacking so they crisp. Freshly shredded cheese melts best. Add green onions after baking. Foil makes cleanup easy. Serve hot.
