Ingredients

  • For the patty melts:
  • 1 lb ground beef
  • 6 slices rye bread
  • ½ tsp onion powder
  • ½ tsp garlic powder
  • Salt and pepper to taste
  • 6 slices cheddar cheese
  • 6 slices provolone cheese
  • 6 tbsp butter softened
  • For the secret sauce:
  • ¼ cup mayonnaise
  • 2 tbsp chopped bacon pieces
  • 3 tbsp ketchup
  • 1 tsp sugar
  • 1 tsp relish

Equipment

  • Large skillet

Method

  1. Form beef into 3 thin patties shaped like the bread. Season both sides with onion powder, garlic powder, salt, and pepper.
  2. Cook patties in a skillet over medium-high heat until cooked through. Remove and set aside. Wipe skillet and reduce heat to medium.
  3. Mix all sauce ingredients until combined.
  4. Butter one side of each bread slice. Place 3 slices butter-side down in the skillet. Top each with 2 slices provolone, a patty, and 2 slices cheddar.
  5. Spread sauce on the unbuttered side of the remaining bread and place sauce-side down on the sandwiches.
  6. Cook until the bottom is toasted and cheese is melting, then flip and toast the second side until golden and the cheese is fully melted. Serve hot.

Notes

Form thin patties for best results. Medium heat prevents burning while cheese melts. Secret sauce can be made ahead. Best eaten immediately. Classic diner comfort at home.
