Method
- Heat 2 inches of oil in a heavy pot to 375°F.
- Whisk flour, sugar, baking powder, salt, and cinnamon.
- Beat eggs and milk; pour into dry ingredients and stir until just combined.
- Fold in diced peaches.
- Drop heaping tablespoons of batter into hot oil; fry 3–4 at a time for 2–3 minutes per side until deeply golden.
- Drain on paper towels.
- Whisk glaze ingredients until smooth; drizzle over warm fritters.
- Let glaze set briefly before serving.
Notes
Maintain oil at 375°F for best texture. Use ripe but firm peaches. Best eaten fresh. The first few rarely make it to a serving plate.
