Peach Fritters

Crispy peach fritters with soft, pillowy centers loaded with fresh peach chunks and finished with a sweet vanilla glaze. A nostalgic summer treat that tastes like grandmother’s kitchen.

Ingredients
  

  • Fritters
  • cups all-purpose flour
  • ¼ cup granulated sugar
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • ½ teaspoon cinnamon
  • cup milk
  • 2 large eggs
  • cups fresh peaches peeled and diced small
  • Vegetable oil for frying
  • Glaze
  • cups powdered sugar
  • 3 tablespoons milk
  • ½ teaspoon vanilla extract

Equipment

  • Heavy pot or deep skillet, thermometer, mixing bowls, slotted spoon

Method
 

  1. Heat 2 inches of oil in a heavy pot to 375°F.
  2. Whisk flour, sugar, baking powder, salt, and cinnamon.
  3. Beat eggs and milk; pour into dry ingredients and stir until just combined.
  4. Fold in diced peaches.
  5. Drop heaping tablespoons of batter into hot oil; fry 3–4 at a time for 2–3 minutes per side until deeply golden.
  6. Drain on paper towels.
  7. Whisk glaze ingredients until smooth; drizzle over warm fritters.
  8. Let glaze set briefly before serving.

Notes

Maintain oil at 375°F for best texture. Use ripe but firm peaches. Best eaten fresh. The first few rarely make it to a serving plate.
