- Heat the olive oil or butter in a large skillet over medium heat.
- Add the diced onion and bell peppers and cook for 3–4 minutes until softened.
- Stir in the Italian seasoning and remove the vegetables from the skillet.
- Lay one tortilla flat and sprinkle mozzarella cheese over one half.
- Top with pepperoni, sautéed vegetables, and another layer of mozzarella.
- Fold the tortilla in half and gently press.
- Cook in the skillet for **2–3 minutes per side**, until golden brown and the cheese is fully melted.
- Repeat with the remaining tortillas.
- Slice into wedges, garnish with parsley or basil if desired, and serve with warm pizza sauce.
