  • * 4 large flour tortillas
  • * 1 teaspoon olive oil or butter
  • * ¼ cup yellow onion diced
  • * ¼ to ½ cup bell peppers diced
  • * ½ teaspoon Italian seasoning
  • * 1 cup shredded mozzarella cheese
  • * ½ cup mini pepperoni slices or regular pepperoni, quartered
  • * ¼ cup pizza sauce for dipping or spreading
  • * Fresh parsley or basil chopped (optional)

Method
 

  1. Heat the olive oil or butter in a large skillet over medium heat.
  2. Add the diced onion and bell peppers and cook for 3–4 minutes until softened.
  3. Stir in the Italian seasoning and remove the vegetables from the skillet.
  4. Lay one tortilla flat and sprinkle mozzarella cheese over one half.
  5. Top with pepperoni, sautéed vegetables, and another layer of mozzarella.
  6. Fold the tortilla in half and gently press.
  7. Cook in the skillet for **2–3 minutes per side**, until golden brown and the cheese is fully melted.
  8. Repeat with the remaining tortillas.
  9. Slice into wedges, garnish with parsley or basil if desired, and serve with warm pizza sauce.

Notes

* Freshly shredded mozzarella melts more smoothly than pre-shredded cheese.
* Cook over medium heat so the cheese melts before the tortilla becomes too dark.
* Add mushrooms, olives, jalapeños, or cooked sausage for your favorite pizza toppings.
* Leftovers reheat best in a skillet or air fryer to keep the tortillas crispy.
* Serve with ranch dressing, garlic butter, or marinara sauce for extra flavor.
