Ingredients
  

  • 1 3.4 oz box instant pistachio pudding mix
  • - 1 15 oz can crushed pineapple, undrained
  • - 1 8 oz container whipped topping, thawed
  • - 1/2 cup mini marshmallows
  • - 1/2 cup chopped pecans or walnuts
  • - 8 oz cottage cheese small curd
  • - Optional: green food coloring extra whipped topping, cherries for garnish

Equipment

  • Large mixing bowl
  • Mixing spoon or whisk
  • Rubber spatula
  • Plastic wrap
  • Serving bowl or trifle dish

Method
 

  1. In a large bowl, combine pistachio pudding and crushed pineapple. Stir until thickened.
  2. Fold in cottage cheese until blended.
  3. Add whipped topping, marshmallows, and chopped nuts. Stir gently to combine.
  4. (Optional) Add food coloring for a more vibrant green hue.
  5. Chill in the fridge for 2 hours or overnight.
  6. Garnish with toppings before serving.

Notes

- Best served chilled.
- Can be made up to 24 hours in advance.
- Store covered in refrigerator for up to 3 days.
