Rice Krispie Chocolate Chip Cookies

Soft, chewy chocolate chip cookies with a light, crispy crunch from Rice Krispies cereal — a fun twist on a classic comfort cookie.

Ingredients
  

  • 1 cup unsalted butter softened
  • 1 cup brown sugar
  • ½ cup granulated sugar
  • 2 large eggs
  • 2 tsp vanilla extract
  • cups all-purpose flour
  • 1 tsp baking soda
  • ½ tsp salt
  • 2 cups Rice Krispies cereal
  • –2 cups chocolate chips

Method
 

  1. Cream butter and sugars until light and fluffy.
  2. Beat in eggs and vanilla.
  3. Whisk flour, baking soda, and salt in a separate bowl.
  4. Mix dry ingredients into wet just until combined.
  5. Gently fold in Rice Krispies and chocolate chips.
  6. Scoop dough onto lined baking sheets.
  7. Bake at 350°F (175°C) for 10–12 minutes.
  8. Cool briefly, then transfer to rack.

Notes

Do not overmix once cereal is added.
Cookies should look slightly underbaked in the center when removed.
Chill dough if spreading too much.
