- In a bowl, gently mix ground beef, egg, breadcrumbs, Worcestershire, onion, salt, and pepper just until combined. Shape into 4 oval patties about ¾-inch thick; press a slight indentation in the center of each.
- Heat olive oil in a large skillet over medium-high heat. Sear patties 3–4 minutes per side until well browned. Remove and pour off excess grease, leaving browned bits in the pan.
- Reduce heat to medium. Melt butter, add mushrooms, and sauté 5–7 minutes until softened and lightly browned.
- Sprinkle flour over mushrooms; stir 1–2 minutes. Slowly whisk in beef broth until smooth. Bring to a gentle simmer.
- Return patties and juices to the skillet. Simmer 10–15 minutes until cooked through and gravy has thickened. Season to taste.
- Serve hot over mashed potatoes with plenty of mushroom gravy.
Notes
Do not overmix the meat. Sear well for flavor. Cook mushrooms until they begin to brown. Whisk broth in gradually for a smooth gravy. Excellent with mashed potatoes, rice, or noodles. Leftovers reheat well. Optional: add a splash of Worcestershire to the gravy for extra depth.
