Method
- Cream butter and sugar until light and fluffy. Beat in egg and vanilla.
- Whisk flour, baking powder, and salt; mix into wet ingredients until just combined.
- Chill dough 30 minutes.
- Preheat oven to 350°F. Line baking sheets with parchment.
- Roll dough into walnut-sized balls, flatten slightly, and press a pineapple ring on top of each.
- Sprinkle pineapple with a little extra sugar.
- Bake 12–15 minutes until edges are golden and pineapple is glossy.
- Cool on the pan 5 minutes, then transfer to a wire rack.
Notes
Pat pineapple dry to prevent sogginess. Chill the dough for easier handling. Best eaten within a few days. Excellent for gifting.
