Salted Caramel Chocolate Chip Cookies

Ingredients
  

  • 1 cup unsalted butter softened
  • 1 cup granulated sugar
  • 1 egg
  • 1 tsp vanilla extract
  • cups all-purpose flour
  • ½ tsp baking powder
  • ¼ tsp salt
  • 1 can pineapple rings drained and patted dry
  • Extra sugar for sprinkling

  • Baking sheets, parchment paper, mixing bowls

Method
 

  1. Cream butter and sugar until light and fluffy. Beat in egg and vanilla.
  2. Whisk flour, baking powder, and salt; mix into wet ingredients until just combined.
  3. Chill dough 30 minutes.
  4. Preheat oven to 350°F. Line baking sheets with parchment.
  5. Roll dough into walnut-sized balls, flatten slightly, and press a pineapple ring on top of each.
  6. Sprinkle pineapple with a little extra sugar.
  7. Bake 12–15 minutes until edges are golden and pineapple is glossy.
  8. Cool on the pan 5 minutes, then transfer to a wire rack.

Notes

Pat pineapple dry to prevent sogginess. Chill the dough for easier handling. Best eaten within a few days. Excellent for gifting.
