Ingredients
  

  • Cookie Base
  • ½ cup unsalted butter
  • ½ cup brown sugar
  • ½ cup granulated sugar
  • ¼ cup milk
  • 3 cups quick oats
  • ½ cup cocoa powder
  • 1 teaspoon vanilla extract
  • Toppings
  • ½ cup caramel sauce
  • Flaky sea salt
  • Optional melted chocolate

  • Wooden spoon

  • Parchment paper

Method
 

  1. Line a tray with parchment paper.
  2. Melt butter in a saucepan.
  3. Stir in brown sugar, granulated sugar, and milk.
  4. Bring to a gentle boil and cook for 90 seconds.
  5. Remove from heat.
  6. Stir in cocoa powder and vanilla.
  7. Fold in oats until coated.
  8. Drop spoonfuls onto parchment paper.
  9. Drizzle with caramel sauce.
  10. Add melted chocolate if desired.
  11. Sprinkle with flaky sea salt.
  12. Refrigerate for 15–20 minutes until set.

Notes

Use quick oats for best texture.
Homemade caramel sauce works great.
Store chilled for the freshest texture.
