Ingredients
  

  • 1 lb ground beef
  • 1 medium onion finely diced
  • 2 cloves garlic minced
  • 1 cup shredded mozzarella cheese
  • ½ cup shredded cheddar cheese
  • 1 tsp Worcestershire sauce
  • ½ tsp salt
  • ½ tsp black pepper
  • ½ tsp paprika
  • 12 –14 egg roll wrappers
  • Vegetable oil for frying
  • Ranch or garlic aioli for serving

  • Large skillet, deep skillet or Dutch oven, thermometer, tongs, paper towels or wire rack

Method
 

  1. Brown ground beef in a large skillet over medium-high heat. Add diced onion and cook until softened and beginning to caramelize, about 5 minutes.
  2. Stir in garlic and cook 30 seconds until fragrant. Season with Worcestershire, salt, pepper, and paprika. Cool 10 minutes.
  3. Stir in both cheeses until combined.
  4. Place an egg roll wrapper in diamond orientation. Add about 3 tablespoons filling. Fold bottom corner over filling, fold in sides, and roll tightly. Seal with water.
  5. Heat 2 inches of oil to 350°F. Fry egg rolls in batches 3–4 minutes, turning once, until deeply golden. Drain on paper towels.
  6. Serve immediately with ranch or garlic aioli.

Notes

Keep wrappers covered while working. Maintain oil temperature for best crispness. Filling can be made ahead. Best eaten fresh but leftovers reheat well in the oven or air fryer.
