Simple Roasted Squash – The Easiest, Tastiest Side Dish

Ingredients
  

  • 1 –2 medium squash zucchini or yellow squash
  • Olive oil
  • Salt to taste
  • Black pepper to taste
  • Grated Parmesan optional

Equipment

  • Baking sheet
  • Sharp knife
  • Cutting board
  • Parchment paper (optional, for easy cleanup)
  • Tongs or spatula

Method
 

  1. Preheat oven to 425°F (220°C).
  2. Slice squash into 1/4–1/2 inch rounds or half-moons.
  3. Arrange on a baking sheet, drizzle with olive oil, and season.
  4. Roast 15–20 minutes until golden and tender.
  5. Serve hot.

Notes

Add garlic powder, herbs, or lemon juice for variations.
Great alongside chicken, fish, or pasta dishes.
