Ingredients

  • For the Chicken & Broth:
  • lbs boneless skinless chicken breasts or thighs
  • 6 cups low-sodium chicken broth
  • 1 cup water
  • 2 tablespoons unsalted butter
  • 1 teaspoon poultry seasoning
  • ¾ teaspoon salt adjust to taste
  • ½ teaspoon black pepper
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • For the Noodles:
  • 8 –10 oz thick egg noodles or homestyle egg noodles
  • 1 cup heavy cream or whole milk optional
  • 1 tablespoon cornstarch + 1 tablespoon cold water optional, for thickening

Equipment

  • Slow cooker, forks for shredding

Method

  1. Place chicken in the slow cooker. Add broth, water, butter, poultry seasoning, salt, pepper, garlic powder, and onion powder.
  2. Cover and cook on LOW 6–7 hours or HIGH 3–4 hours until chicken is very tender.
  3. Remove chicken, shred with two forks, and return to the slow cooker.
  4. Stir in egg noodles. Cover and cook on HIGH 20–30 minutes, stirring once, until noodles are soft.
  5. Stir in cream or milk if using. For thicker broth, add cornstarch slurry and cook 5–10 minutes more.
  6. Taste, adjust seasoning, and serve hot.

Notes

Use thick egg noodles for best texture. Add noodles only at the end to prevent mushiness. Cream is optional but adds richness. Leftovers thicken—loosen with broth when reheating. Excellent made ahead. Chicken thighs stay especially moist. Taste and adjust salt at the end.
