Slow Cooker Amish Honey Glazed Carrots

Tender slow-cooked carrots coated in a glossy honey-butter glaze with warm spices and a hint of citrus. A sweet, comforting Amish-style side dish perfect for holidays, Sunday dinners, or easy weeknight meals.

Ingredients
  

Carrots:
  • 2 lbs fresh carrots peeled & sliced (or 2 lbs baby carrots)
Glaze:
  • ¼ cup unsalted butter melted
  • ¼ cup honey
  • 2 tbsp brown sugar
  • ¼ cup orange juice or apple juice
  • 1 tsp vanilla extract
Spices:
  • ½ tsp cinnamon
  • ¼ tsp nutmeg
  • Pinch of cloves optional
  • Salt & black pepper to taste

Equipment

  • Slow cooker (3–6 quart)
  • mixing bowl
  • whisk
  • Vegetable peeler
  • Measuring cups & spoons

Method
 

  1. Add peeled, sliced carrots to the slow cooker.
  2. In a bowl, whisk together melted butter, honey, brown sugar, orange juice, vanilla, and spices.
  3. Pour glaze over carrots and toss to coat evenly.
  4. Cook on LOW 4–5 hours or HIGH 2–3 hours, until tender.
  5. Remove lid for last 30 minutes to thicken glaze.
  6. Optional: Transfer liquid to saucepan, simmer 5–7 minutes to reduce, then return to carrots.
  7. Stir gently, garnish with parsley and orange zest.

Notes

For a sweeter glaze, add 1 extra tablespoon honey.
For richer flavor, stir in 1 tablespoon butter before serving.
Carrots stay perfect on “WARM” for up to 3 hours—great for potlucks.
Stores 3–4 days in the fridge; reheats beautifully in the microwave or stovetop.
