- Add peeled, sliced carrots to the slow cooker.
- In a bowl, whisk together melted butter, honey, brown sugar, orange juice, vanilla, and spices.
- Pour glaze over carrots and toss to coat evenly.
- Cook on LOW 4–5 hours or HIGH 2–3 hours, until tender.
- Remove lid for last 30 minutes to thicken glaze.
- Optional: Transfer liquid to saucepan, simmer 5–7 minutes to reduce, then return to carrots.
- Stir gently, garnish with parsley and orange zest.
Notes
For a sweeter glaze, add 1 extra tablespoon honey.
For richer flavor, stir in 1 tablespoon butter before serving.
Carrots stay perfect on “WARM” for up to 3 hours—great for potlucks.
Stores 3–4 days in the fridge; reheats beautifully in the microwave or stovetop.
