Ingredients

  • 3 pounds pork baby back ribs
  • cups barbecue sauce
  • ¼ cup brown sugar
  • 2 tablespoons apple cider vinegar
  • 1 teaspoon garlic powder
  • ½ teaspoon smoked paprika optional
  • Salt and black pepper to taste

Equipment

  • Slow cooker (6-quart recommended), baking sheet (for optional broil)

Method

  1. emove the thin membrane from the back of the ribs. Season both sides with salt, pepper, and garlic powder. Cut into sections that fit the slow cooker.
  2. Whisk barbecue sauce, brown sugar, apple cider vinegar, and smoked paprika (if using).
  3. Place rib sections in the slow cooker (stand upright if possible). Pour sauce over the ribs to coat.
  4. Cover and cook on LOW 7–8 hours or HIGH 4–5 hours, until meat is tender and pulling from the bone.
  5. Optional: Brush with extra sauce and broil 3–4 minutes until sticky and lightly charred.
  6. Rest a few minutes, then serve

Notes

Removing the membrane improves texture and flavor. Standing ribs upright helps even cooking. LOW setting yields the most tender results. The broiler step adds excellent caramelization. Save extra sauce for serving. Excellent leftovers. Serve with coleslaw, cornbread, and plenty of napkins.
