Ingredients
  

  • 1 lb ground beef 80/20 recommended
  • 4 cups potatoes peeled and cubed
  • 1 small onion diced
  • 1 can cream of mushroom soup
  • 2 cups beef broth
  • Salt and pepper to taste
  • 1 tsp garlic powder
  • Fresh parsley for garnish optional

Method
 

  1. Brown the ground beef in a skillet over medium-high heat until no pink remains. Season with salt, pepper, and garlic powder. Drain excess grease and transfer to the slow cooker.
  2. Add the cubed potatoes and diced onion.
  3. Whisk together the cream of mushroom soup and beef broth until smooth. Pour over the ingredients in the slow cooker and stir gently.
  4. Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours, until the potatoes are fork-tender.
  5. Stir well, ladle into bowls, and garnish with parsley if desired. Serve with crusty bread or garlic toast.

Notes

80/20 beef gives the best flavor. Cut potatoes evenly for consistent cooking. The stew thickens as it sits and reheats beautifully. Excellent for meal prep and freezing. Highly requested cold-weather comfort food.
