- Brown the ground beef in a skillet over medium-high heat until no pink remains. Season with salt, pepper, and garlic powder. Drain excess grease and transfer to the slow cooker.
- Add the cubed potatoes and diced onion.
- Whisk together the cream of mushroom soup and beef broth until smooth. Pour over the ingredients in the slow cooker and stir gently.
- Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours, until the potatoes are fork-tender.
- Stir well, ladle into bowls, and garnish with parsley if desired. Serve with crusty bread or garlic toast.
Notes
80/20 beef gives the best flavor. Cut potatoes evenly for consistent cooking. The stew thickens as it sits and reheats beautifully. Excellent for meal prep and freezing. Highly requested cold-weather comfort food.
