- Mix ground beef, breadcrumbs, Parmesan, milk, eggs, Worcestershire, garlic powder, onion powder, salt, and pepper until just combined. Shape into a loaf.
- Caramelize sliced onions in butter over medium heat until soft and golden, about 10–12 minutes.
- Pour half the broth and half the onions into the slow cooker. Place the meatloaf on top; pour remaining broth around the sides.
- Cover and cook on low 6–7 hours until tender and cooked through.
- About 15 minutes before serving, top with Swiss cheese and remaining onions. Cover until cheese melts.
- Slice, spoon onion gravy over the top, garnish with parsley, and serve.
Notes
Do not overmix the meat. Properly caramelize the onions for best flavor. Add cheese only at the end. Excellent with mashed potatoes or crusty bread. Highly tender and comforting.
