Ingredients
  

  • 3 –4 lbs apples peeled and sliced into wedges (Granny Smith, Honeycrisp, or a mix)
  • ¼ cup brown sugar
  • ¼ cup granulated sugar
  • 2 tablespoons cornstarch
  • 1 teaspoon cinnamon
  • ¼ teaspoon nutmeg
  • Pinch of salt
  • 2 tablespoons butter melted
  • 1 teaspoon vanilla extract
  • 2 tablespoons water or apple juice

  • Slow cooker (4–6 quart)

Method
 

  1. Place apple wedges in the slow cooker.
  2. Whisk sugars, cornstarch, cinnamon, nutmeg, and salt; sprinkle over apples and toss to coat.
  3. Drizzle with melted butter, vanilla, and water or apple juice; stir gently.
  4. Cover and cook on low 4–5 hours or high 2–3 hours, until apples are tender and sauce is thick and glossy. Stir halfway if possible.

Notes

Use firm apples that hold their shape. Resting thickens the sauce. Excellent over pancakes, ice cream, or with pork. Leftovers reheat well and freeze successfully. Pure low-and-slow comfort.
