  • 2 to 2½ pounds small red or yellow potatoes washed and halved (or quartered if large)
  • 1 cup bottled Italian salad dressing regular or zesty
  • ½ teaspoon kosher salt or to taste

Method
 

  1. Lightly grease the slow cooker.
  2. Add the cut potatoes in an even layer.
  3. Pour the Italian dressing over the potatoes, sprinkle with salt, and stir gently to coat.
  4. Cover and cook on LOW 4–5 hours or HIGH 2–3 hours, until potatoes are tender but still hold their shape.
  5. Stir gently, taste, and adjust salt if needed.
  6. Serve warm, spooning the cooking juices over the top.

Notes

Small, even-sized potatoes cook most evenly. Greasing the cooker helps with cleanup. Low heat yields the best texture. The cooking juices are flavorful—spoon them over when serving. Excellent make-ahead side. Leftovers reheat well. Adaptable with extra herbs, garlic, or cheese if desired.
