Slow Cooker Kielbasa & Hashbrown Casserole

A creamy, cheesy slow cooker casserole packed with smoked sausage and potatoes. The perfect “dump and go” comfort meal.

Ingredients
  

  • 1 32 oz bag frozen hashbrowns
  • 1 package kielbasa diced
  • 1 small onion diced
  • cups shredded cheddar cheese divided
  • ½ cup sour cream
  • ½ cup milk
  • 1 10 oz can cream of mushroom or chicken soup
  • Optional seasonings: salt pepper, garlic powder, onion powder

Equipment

  • 6-quart or larger slow cooker (Crockpot)
  • Medium mixing bowl
  • whisk
  • Measuring cups and spoons
  • Spatula or large spoon

Method
 

  1. Lightly grease your slow cooker.
  2. Add hashbrowns, kielbasa, onion, and 2 cups of cheese.
  3. In a bowl, whisk sour cream, milk, and soup. Add seasonings.
  4. Pour mixture over ingredients in the cooker and top with remaining cheese.
  5. Cook on LOW for 6 hours or HIGH for 3–4 hours.
  6. Serve hot and enjoy!

Notes

Refrigerate leftovers in an airtight container for up to 4 days
Reheat in microwave or oven until hot throughout
Freeze portions for up to 2 months (thaw overnight before reheating)
