Slow Cooker Potato and Onion Bake

Easy slow cooker potato and onion bake with thinly sliced potatoes and sweet onions layered with butter. Tender, savory, and hands-off comfort food.

Ingredients
  

  • 3 tablespoons salted butter melted (plus extra for greasing)
  • 2 pounds russet or Yukon Gold potatoes thinly sliced (about ⅛-inch thick)
  • 2 large yellow onions thinly sliced (about ⅛–¼-inch thick)

Equipment

  • 4- to 6-quart slow cooker, knife or mandoline

Method
 

  1. Lightly grease a 4- to 6-quart slow cooker with butter.
  2. Slice potatoes and onions into thin, even rounds.
  3. Drizzle a little melted butter in the bottom of the slow cooker.
  4. Layer potatoes, then onions, then a drizzle of melted butter. Repeat until all ingredients are used, finishing with butter on top.
  5. Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours, until potatoes are tender.
  6. Rest with the lid off for 10 minutes. Scoop deeply and spoon juices over the top when serving.

Notes

Slice evenly for consistent cooking. No extra liquid needed. Resting helps the juices thicken slightly. Excellent with roasted meats, chicken, or sausages.
