Easy slow cooker sausage, corn, and red potatoes with smoked sausage, tender baby reds, sweet corn, butter, and ranch seasoning. A comforting one-pot meal that requires almost no effort and fills the house with incredible aroma.

Ingredients
  

  • 1 lb smoked sausage or kielbasa sliced
  • lbs baby red potatoes halved
  • cups frozen or canned corn drained if canned
  • 4 tablespoons butter cut into pieces
  • 1 packet ranch seasoning mix
  • ½ cup chicken broth or water
  • Salt and black pepper to taste
  • Fresh parsley for garnish optional

Equipment

  • 4- to 6-quart slow cooker

Method
 

  1. Layer potatoes in the bottom of the slow cooker.
  2. Add sliced sausage, then scatter corn on top.
  3. Sprinkle ranch seasoning over everything.
  4. Dot with butter pieces and pour broth around the edges.
  5. Season lightly with salt and pepper.
  6. Cover and cook on low 4–5 hours until potatoes are fork-tender.
  7. Stir gently, garnish with parsley if desired, and serve.

Notes

No browning required. Baby red potatoes hold their shape best. Frozen corn can be used directly from the freezer. Stir gently at the end to coat everything in the buttery sauce. Excellent leftovers. Adjust salt after cooking since ranch seasoning contains sodium. Double for larger groups if your slow cooker allows.
