Ingredients
  

  • 1 lb pork breakfast sausage or mild Italian sausage casings removed
  • 1 lb processed melting cheese such as Velveeta, cut into 1-inch cubes
  • 1 can 10 oz diced tomatoes with green chilies (such as RoTel), undrained
  • Tortilla chips corn chips, or toasted baguettes for serving

  • Skillet, slow cooker (2–4 quarts)

Method
 

  1. Brown the sausage in a skillet over medium heat, breaking it up until no pink remains (7–10 minutes). Drain thoroughly.
  2. Lightly spray a 2–4 quart slow cooker. Add the cubed cheese.
  3. Spoon the drained sausage over the cheese and pour the undrained tomatoes with green chilies on top.
  4. Cover and cook on LOW 1½–2 hours or HIGH about 1 hour, stirring every 30 minutes, until the cheese is fully melted and the dip is hot and bubbly.
  5. Stir well, switch to WARM, and serve with chips or toasted baguette. Add a splash of milk if the dip thickens too much while serving.

Notes

Drain the sausage well to avoid an oily dip. Stir periodically while melting. Keep on WARM for serving. A splash of milk restores creaminess if needed. Excellent for game day and parties. Can be doubled in a larger slow cooker. Leftovers reheat well with a little milk.
