Ingredients
  

  • 1 package about 12–14 oz skinless smoked sausage, sliced
  • 8 medium Yukon gold potatoes quartered
  • 1 green bell pepper diced
  • 1 yellow bell pepper diced
  • 2 tablespoons butter cubed
  • 2 teaspoons olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • ½ teaspoon black pepper
  • Salt to taste

Method
 

  1. Preheat oven to 375°F.
  2. Arrange sliced sausage, quartered potatoes, and diced peppers in a large baking dish.
  3. Dot with cubed butter, drizzle with olive oil, and season with oregano, basil, black pepper, and salt. Toss to coat and spread evenly.
  4. Cover with foil and bake 40–50 minutes until potatoes are tender.
  5. Optional: uncover for the last 10 minutes for more browning.
  6. Rest a few minutes, taste, adjust seasoning, and serve hot.

Notes

Cut potatoes evenly for uniform cooking. Covering ensures tender potatoes. Add carrots, broccoli, zucchini, or cheese as desired. Ham can replace sausage. Leftovers reheat well. Excellent adaptable weeknight meal. Seasoning can be adjusted to taste after baking.
