Method
- Preheat oven to 375°F. Grease a 9x13-inch baking dish.
- In a large bowl, whisk together cream of chicken soup, sour cream, milk, 1½ cups cheese, garlic powder, onion powder, salt, and pepper until smooth.
- Place diced potatoes and sliced sausage in the baking dish. Pour sauce over and gently mix to coat.
- Cover with foil and bake 45 minutes.
- Remove foil, sprinkle remaining ½ cup cheese on top, and bake uncovered 15–20 minutes until potatoes are fork-tender and the top is golden and bubbly.
- Rest 5–10 minutes, garnish if desired, and serve warm.
Notes
Dice potatoes evenly for uniform cooking. Cover tightly for the first bake so potatoes steam properly. Rest after baking for cleaner servings. Sharp cheddar gives the best flavor. Excellent leftovers and freezer-friendly when assembled unbaked. Andouille adds mild heat; kielbasa keeps it milder.
