Soft Applesauce Peanut Butter Oat Cookies

Four-ingredient, flourless cookies that are soft, chewy, and naturally sweet. Ready in about 20 minutes with pantry staples.

Ingredients
  

  • 1 cup sweetened applesauce
  • 1 cup peanut butter or any nut/seed butter
  • cups rolled oats
  • teaspoon cinnamon

Equipment

  • mixing bowl
  • Spoon or spatula
  • Baking sheet
  • Parchment paper

Method
 

  1. Preheat oven to 350°F. Line a baking sheet with parchment paper.
  2. In a bowl, mix applesauce and peanut butter until smooth and creamy.
  3. Stir in oats and cinnamon until evenly coated.
  4. Scoop spoonfuls onto the baking sheet and shape as desired (they spread very little).
  5. Bake 12–15 minutes, until edges just begin to turn golden.
  6. Cool on the pan for 5–10 minutes to firm up before moving.

Notes

Cookies firm as they cool—do not overbake.
Store in an airtight container up to 4 days at room temperature or 1 week in the refrigerator.
Dough can be made ahead and refrigerated up to 2 days.
Freezes well for up to 3 months.
