- Preheat oven to 350°F. Line a baking sheet with parchment paper.
- In a bowl, mix applesauce and peanut butter until smooth and creamy.
- Stir in oats and cinnamon until evenly coated.
- Scoop spoonfuls onto the baking sheet and shape as desired (they spread very little).
- Bake 12–15 minutes, until edges just begin to turn golden.
- Cool on the pan for 5–10 minutes to firm up before moving.

Cookies firm as they cool—do not overbake.
Store in an airtight container up to 4 days at room temperature or 1 week in the refrigerator.
