Soft & Chewy Molasses Cookies

Classic chewy molasses cookies with crackly sugar tops and warm ginger spice. Perfect holiday baking recipe for Christmas cookie trays and winter desserts.

Ingredients
  

  • cups flour
  • 2 tsp ginger
  • 1 tsp cinnamon
  • 1 tsp baking soda
  • ¼ tsp salt
  • ¾ cup butter
  • 1 cup brown sugar
  • 1 egg
  • ¼ cup molasses
  • cup sugar for rolling

Equipment

  • mixing bowls
  • electric mixer
  • baking sheets
  • Parchment paper
  • Cookie scoop
  • cooling rack

Method
 

  1. Preheat oven to 350°F.
  2. Whisk dry ingredients.
  3. Cream butter and sugar.
  4. Add egg and molasses.
  5. Combine with dry ingredients.
  6. Roll in sugar.
  7. Bake 10–12 minutes.
  8. Cool 5 minutes before transferring.

Notes

Do not overbake for chewy centers.
Use regular molasses, not blackstrap.
Great for holiday cookie exchanges.
