Soft Graham Cracker Cookies with Cream Cheese Frosting

Soft cinnamon graham cracker cookies topped with tangy cream cheese frosting and salted caramel drizzle. A bakery-style dessert perfect for holidays or special treats.

Ingredients
  

Cookies
  • ¾ cup butter
  • cup sugar
  • cup brown sugar
  • 1 egg
  • 1 tsp vanilla
  • cups flour
  • 1 tsp baking soda
  • ½ tsp salt
  • 1 tsp cinnamon
  • 1 cup graham cracker crumbs
Frosting
  • 4 oz cream cheese
  • 2 tbsp butter
  • cups powdered sugar
  • 1 tsp vanilla
  • 1 –2 tbsp milk
Topping
  • Salted caramel sauce

Equipment

  • mixing bowls
  • electric mixer
  • Baking sheet
  • Parchment paper
  • cooling rack

Method
 

  1. Preheat oven to 350°F.
  2. Cream butter and sugars.
  3. Add egg and vanilla.
  4. Mix dry ingredients into wet. Fold in graham crumbs.
  5. Scoop, flatten, bake 10–12 minutes.
  6. Cool completely.
  7. Beat frosting ingredients until smooth.
  8. Frost cookies and drizzle caramel.

Notes

Chill dough for thicker cookies.
Refrigerate after frosting.
Add flaky salt for extra contrast.
