Method
- Whisk cornmeal, self-rising flour, sugar, and salt in a medium bowl.
- Beat egg and buttermilk in a small bowl. Pour into dry ingredients and stir just until combined. Batter should be thick but pourable; add a splash more buttermilk if needed.
- Heat about ¼ inch oil or bacon grease in a large skillet over medium heat until shimmering.
- Drop spoonfuls of batter into the pan and flatten gently into 3-inch rounds.
- Fry 2–3 minutes per side until deeply golden and crispy at the edges.
- Drain on paper towels and serve hot.
Notes
Do not overmix. Medium heat gives the best crust without burning. Best eaten fresh while edges are crisp. Excellent with butter, honey, or savory main dishes.
