- Flake salmon and remove large bones or skin if desired.
- Mix with onion, flour, cornmeal, egg, mayo, salt, and pepper.
- Form into 4–6 patties and let rest 5–10 minutes.

- Drain on paper towels and serve hot with lemon or tartar sauce.
