Spinach Feta Cheese Crisps

Ingredients
  

  • 1 cup fresh spinach chopped
  • ½ cup feta cheese crumbled
  • ½ cup Parmesan cheese finely grated
  • ½ cup mozzarella cheese shredded
  • 1 tsp olive oil
  • Black pepper to taste

Equipment

  • Baking sheet, parchment paper, mixing bowl

Method
 

  1. Preheat oven to 375°F. Line a baking sheet with parchment paper.
  2. Mix spinach, feta, Parmesan, mozzarella, olive oil, and black pepper in a bowl.
  3. Spoon small mounds onto the baking sheet and flatten into thin rounds.
  4. Bake 12–15 minutes until edges are deeply golden and crispy.
  5. Cool on the pan for a few minutes before serving.

Notes

Flatten thinly for maximum crispiness. Best eaten the day they are made. Double the batch—they disappear fast. Delicious warm or at room temperature.
