Strawberry Cream Cheese Loaf
Moist, buttery loaf cake made with fresh strawberries and cream cheese, perfect for brunch or dessert.

For the Loaf:
- ½ cup 113g unsalted butter, softened
- 4 oz 113g cream cheese, softened
- 1 cup 200g granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1 ½ cups 190g all-purpose flour
- 1 ½ tsp baking powder
- ¼ tsp salt
- ⅓ cup 80ml milk
- 1 cup chopped fresh strawberries patted dry
- 1 tbsp flour for coating strawberries
Optional Glaze:
- ½ cup powdered sugar
- 1 –2 tbsp milk or lemon juice
- ¼ tsp vanilla extract
Preheat oven to 350°F. Grease and line a loaf pan.
Cream butter and cream cheese.
Add sugar, eggs, and vanilla.
Mix dry ingredients separately.
Combine wet and dry, alternating with milk.
Fold in flour-coated strawberries.
Bake for 50–60 mins. Cool completely.
Drizzle with optional glaze.
