Strawberry Cream Cheese Loaf

Moist, buttery loaf cake made with fresh strawberries and cream cheese, perfect for brunch or dessert.

Ingredients
  

For the Loaf:

  • ½ cup 113g unsalted butter, softened
  • 4 oz 113g cream cheese, softened
  • 1 cup 200g granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 ½ cups 190g all-purpose flour
  • 1 ½ tsp baking powder
  • ¼ tsp salt
  • cup 80ml milk
  • 1 cup chopped fresh strawberries patted dry
  • 1 tbsp flour for coating strawberries

Optional Glaze:

  • ½ cup powdered sugar
  • 1 –2 tbsp milk or lemon juice
  • ¼ tsp vanilla extract

Instructions
 

  • Preheat oven to 350°F. Grease and line a loaf pan.
  • Cream butter and cream cheese.
  • Add sugar, eggs, and vanilla.
  • Mix dry ingredients separately.
  • Combine wet and dry, alternating with milk.
  • Fold in flour-coated strawberries.
  • Bake for 50–60 mins. Cool completely.
  • Drizzle with optional glaze.
