Strawberry Crunch Cheesecake Bites

Mini strawberry cheesecake bites with buttery vanilla wafer crust, creamy strawberry filling, and crunchy pink crumble topping. Perfect for parties and summer gatherings.

Ingredients
  

  • Crust:
  • cups vanilla wafer crumbs
  • 4 tbsp melted butter
  • 1 tbsp sugar
  • Filling:
  • 16 oz cream cheese
  • ½ cup powdered sugar
  • 1 tsp vanilla
  • ½ cup strawberry preserves
  • 8 oz whipped topping
  • Crunch Topping:
  • 1 cup wafer crumbs
  • 3 tbsp melted butter
  • 2 tbsp strawberry gelatin powder

Equipment

  • Mini muffin tin
  • Paper liners
  • electric mixer

Method
 

  1. Preheat oven to 350°F.
  2. Mix crust ingredients and press into muffin liners.
  3. Bake 5 minutes; cool completely.
  4. Beat cream cheese and sugar until smooth.
  5. Fold in vanilla, preserves, and whipped topping.
  6. Spoon into crusts.
  7. Chill 2 hours.
  8. Mix topping ingredients and sprinkle before serving.

Notes

Chill overnight for best flavor
Add topping just before serving
Fresh strawberries add brighter flavor
Store refrigerated
